Warming Veggie Pasta


  • One box of Banza (really nay chickpea pasta)

  • 1 cup mushrooms

  • 1 medium zucchini, chopped

  • 1 small yellow squash, chopped

  • 1 large tomato, chopped

  • 4 tablespoons olive oil

  • 2 cloves of garlic, chopped or 3 tbsp powder

  • 2 tablespoons nutritional yeast


  1. In a large pot, bring water to boil, add pasta

  2. While the pasta cooks, in a medium size pan on medium heat add oil and garlic; cook garlic for 3 minutes

  3. Add chopped veggies and cook for 8-10 minutes

  4. Drain pasta and run under cold water

  5. In a large bowl, combine pasta and veggies

  6. Sprinkle nutritional yeast, salt and pepper on top
