Vegan Portobello Mushroom Tacos

Serves: 2

Ingredients

  • 2 tbsp olive oil

  • 4 large portobello mushrooms, sliced

  • 2 bell peppers, sliced

  • 1/3 onion, chopped

  • 1 tomato, chopped

  • 1 tbsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 1/2 tsp cumin

  • 4 gluten free tortillas

  • Topping:

  • Avocado or guacamole

  • 2 tbsp sunflower seeds

  • 1 tbsp nutritional yeast


Directions:

  • In a large skillet over low-medium heat, add oil and onions; sauté for 3 mins

  • Add mushrooms and peppers and cook for 5 minutes and season with spices

  • Stirring occasionally, cook another 7-8 minutes or until softened

  • Warm the tortillas and spoon the fajita mixture into the center of tortillas

  • Top with toppings and enjoy!
