Shrimp Fajitas


  • 1lb wild shrimp

  • q tablespoons olive oil or spray avocado

  • simply organic foods fajita mix (or make your own)

  • 1/2 small red onion, chopped

  • 1/2 cup cherry tomatoes, chopped

  • 1 bunch of cilantro, chopped

  • 2 large collard greens

  • 1/2 avocado

  • 1 clove garlic, chopped

  • 1 chop chopped mango or pineapple

  • Salt and pepper to taste


  1. Add oil to a pan on medium heat; add wild shrimp and chopped garlic

  2. Mix in fajita mix ; combine well; cover and cook for 5-6 mins on medium heat

  3. Chop onions, tomatoes & cilantro

  4. Slice up or mash some avocado

  5. Plate the collard greens wrap, add shrimp and top with veggies & avocado

  6. Sprinkle on some S&P
