Quinoa Stuffed Peppers


  • Six medium bell peppers top cut off and cores removed.

  • 1 cup uncooked quinoa ( I used Trader Joe's Frozen to make it easy)

  • 1 tablespoon olive oil

  • 1 small onion chopped

  • 1 cup green beans, chopped

  • 1 cup cherry tomatoes, chopped

  • 2 garlic cloves minced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tbsp nutritional yeast

  • Protein

    • I added baked tofu, and my husband added organic chicken sausage


  1. Cook quinoa according to directions

  2. Preheat the oven to 375°F, and prepare the peppers and chop veggies

  3. In a pan over medium heat, add oil, onions, and garlic and sautee for 3-4 minutes, then add chopped veggies and spices cooking for another 5-7 minutes

  4. Carefully spoon the mixture into the sliced peppers

  5. Bake uncovered until the peppers are tender for 30 minutes. You can also add some vegan or goat cheese on top!

  6. Once cooked, remove from heat and add protein if enjoying!
