Paleo Apple Crumble

  • 3 medium organic red apples, peeled and thinly

  • 1/3 cup organic oats (optional)

  • 1 tablespoon honey

  • 1 tablespoon finely ground, blanched almond flour

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ½ teaspoon pure vanilla extract

  • 1-2 tablespoons water (optional)

  • ¾ cup almonds, chopped

  • ½ cup unsweetened coconut flakes

  • ¼ cup finely ground, blanched almond flour

  • ¼ teaspoon ground cinnamon

  • 1 tablespoons honey

  1. Preheat oven to 350°F. Grease an 8-inch square baking pan with coconut oil. Set aside.

  2. In a large bowl, add all filling ingredients and combine well using hands or spatula. If your mixture isn’t very wet, add in water—you’ll want to see 1-2 tablespoons liquid at the bottom of the bowl

  3. Pour mixture into baking pan and smooth out into an even layer.

  4. In a medium bowl, combine topping ingredients until crumbles form. I used a fork.

  5. Gently add the topping crumble evenly over the apple filling

  6. Bake for 40-50 minutes. Keep an eye on the crumble - you’ll know its done when the top is a deep golden brown and the juice around the filling has thickened.

  7. Allow to cool for 5 mins Serve warm with of NTG coconut nice cream and enjoy!
