1 cup quinoa
¼ cup green onion, sliced thinly
1 garlic clove, chopped
1/2 cup broccoli, roasted or steamed
2 Tbs. fresh lemon or orange juice
Zest of one orange
1 Tbs. olive oil
2 handfuls of greens
Sea salt & pepper to taste
Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.
Whisk olive oil, orange juice, and zest together.
Combine all ingredients together, season to taste with salt and pepper and serve.
In a large bowl, add your greens followed by quinoa dish
