Orange Zest Quinoa Salad Over Greens


  • 1 cup quinoa

  • ¼ cup green onion, sliced thinly

  • 1 garlic clove, chopped

  • 1/2 cup broccoli, roasted or steamed

  • 2 Tbs. fresh lemon or orange juice

  • Zest of one orange

  • 1 Tbs. olive oil

  • 2 handfuls of greens

  • Sea salt & pepper to taste


  1. Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.

  2. Whisk olive oil, orange juice, and zest together.

  3. Combine all ingredients together, season to taste with salt and pepper and serve.

  4. In a large bowl, add your greens followed by quinoa dish
