Ingredients:
1 cup organic almond butter
1 egg large
1 tsp vanilla extract
1 cup hemp seeds (protein source); you can sub with 1 /2 cup gluten free oats (using oats? They'll just be good cookies - not protein!)
1 cup unsweetened shredded coconut
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup dark unsweetened chocolate chips or cacao nibs (more if you want to top with extra chocolate.)
1/4 cup about 3-4 tbsp full fat coconut milk
1/2 chopped nuts (whatever kind you like and more if you want to top cookies)
Directions:
Preheat oven to 350F. Place parchment paper on a baking tray. No paper? Grease with coconut oil
Combine almond butter, egg, coconut milk and vanilla in a bowl. Mix hemp seeds, nuts, shredded coconut, cinnamon, baking soda, chocolate and salt in separate bowl. Using hand or stand mixer, blend dry ingredients into wet until combined.
Using a tablespoon, drop cookie dough onto sheet about 2 inches apart- using back of the spoon to flatten each ball. Bake in the oven on middle rack for approximately 8- 10 minutes. I like to add more chocolate on top of the cookies around the 5-7 minutes mark because I’m extra and I like my cookies extra.
Remove, let cool and top with nuts.
