NTG Loaded Veggie Crockpot

Ingredients:

  • 2 tbsp extra virgin olive oil

  • 3 cloves garlic, chopped

  • 1 onion, chopped

  • 1 cup celery, chopped

  • 4 carrots, chopped

  • 1 16-oz can diced tomatoes

  • 1 can white beans (if you have trouble with beans skip & double up on veggies)

  • 12 cups vegetable broth

  • 1 bunch curly green kale, stemmed & chopped

  • 1 tsp thyme

  • Salt and pepper

Toppings:

  • 1/2 avocado

  • 2 hemp seeds

Directions:

  1. Coat the bottom of the crockpot with oil.

  2. Add onion, garlic, celery, and carrots, stir.

  3. Cover and cook on med-high for about a half hour. Season with salt and pepper, and add thyme.

  4. Add tomatoes (undrained), beans, and vegetable broth. Add kale and stir gently.

  5. Cover and cook on low for 6 hours.

  6. Top avocado and hemp seeds
