Serves 3-4
Ingredients
2 tbsp coconut oil
4 1/2 cups of cauliflower rice, fresh or frozen
2 cups broccoli, chopped
3 tbsp full fat coconut milk
2 tbsp sesame seeds
Salt to taste
Toppings:
Chives (optional)
1/3 avocado, sliced
Make it meal:
Add 2 cups of arugula or spinach and 4-6 ounces of protein
Directions:
Using a bamboo steamer or a large pan, steam broccoli for 4-6 minutes. If using large pan, blanch in water. Drain and set aside.
In a medium pan over medium heat, add coconut oil and milk and cauliflower.
Combine well and cook on medium heat until cauliflower has softened, around 5-6 minutes.
Combine rice with broccoli so both are evenly coated.
Top with chives and avocado.
