Vegan Portobello Mushroom Tacos

Ingredients

2 tbsp olive oil
-
4 large portobello mushrooms, sliced

2 bell peppers, sliced

1/3 onion, chopped
-
1 tomato, chopped
-
1 tbsp garlic powder
-
1 tsp paprika
-
1/2 tsp salt
-
1/2 tsp pepper
-
1 1/2 tsp cumin
-
4 gluten free tortillas
-
Topping:
-
Avocado or guacamole
-
2 tbsp sunflower seeds
-
1 tbsp nutritional yeast
Directions:
-
In a large skillet over low-medium heat, add oil and onions; sauté for 3 mins
-
Add mushrooms and peppers and cook for 5 minutes and season with spices
-
Stirring occasionally, cook another 7-8 minutes or until softened
-
Warm the tortillas and spoon the fajita mixture into the center of tortillas
-
Top with toppings and enjoy!
