• One box of Banza (really nay chickpea pasta)

  • 1 cup mushrooms

  • 1 medium zucchini, chopped

  • 1 small yellow squash, chopped

  • 1 large tomato, chopped

  • 4 tablespoons olive oil

  • 2 cloves of garlic, chopped or 3 tbsp powder

  • 2 tablespoons nutritional yeast


  • In a large pot, bring water to boil, add pasta 

  • While the pasta cooks, in a medium size pan on medium heat add oil and garlic; cook garlic for 3 minutes

  • Add chopped veggies and cook for 8-10 minutes

  • Drain pasta and run under cold water

  • In a large bowl, combine pasta and veggies 

  • Sprinkle nutritional yeast, salt and pepper on top
