VEGGIE QUINOA

 INGREDIENTS 


  • 2 cups quinoa

  • 1 red pepper, chopped

  • 1/3 cup corn, chopped

  • 1/4 cup fresh cilantro finely chopped

  • 1 cup cherry tomatoes , chopped

  • 1 small yellow onion chopped

  • 2 garlic cloves, chopped

  • 1-2 avocado, chopped

  • 1/2 cucumber, chopped

  • Juice of 2 limes

  • 1/3- 1/4 cup extra-virgin olive oil

  • Salt & pepper


Directions:

  • Rinse the quinoa under cold running water 

  • In a medium size pan, combine water and quinoa

  • Place over a medium heat and bring to the boil.

  • Reduce to a simmer for 10 to 15 minutes, or until liquid is absorbed; fluff with a fork when finished and remove from heat​

  • While to quinoa cooks, chop your veggies

  • Combine veggies and quinoa together

  • Dress with olive oiled lime juice; stir well

  • Best enjoyed chilled
