VEGGIE QUINOA

Serves 3-4

Ingredients: 

  • 2 cups quinoa, uncooked

  • 1 red pepper, chopped

  • 1/3 cup corn, chopped

  • 1/4 cup fresh cilantro finely chopped

  • 1 cup cherry tomatoes , chopped

  • 1 small yellow onion chopped

  • 2 garlic cloves, chopped

  • 1/2 cucumber, chopped

  • Juice of 2 limes

  • 1/3- 1/4 cup extra-virgin olive oil

  • Salt & pepper

  • Toppings:

  • Chopped avocado

Directions:

  1. Cook quinoa according to directions.

  2. While to quinoa cooks, prep and  chop veggies.

  3. Combine veggies and quinoa together.

  4. Dress with olive oil and lime juice and season with salt and pepper

  5. Add toppings and enjoy!

  6. Best served chilled.
