VEGGIE QUINOA
Serves 3-4
Ingredients:

2 cups quinoa, uncooked
-
1 red pepper, chopped
-
1/3 cup corn, chopped
-
1/4 cup fresh cilantro finely chopped
-
1 cup cherry tomatoes , chopped
-
1 small yellow onion chopped
-
2 garlic cloves, chopped
-
1/2 cucumber, chopped
-
Juice of 2 limes
-
1/3- 1/4 cup extra-virgin olive oil
-
Salt & pepper
-
Toppings:
-
Chopped avocado
Directions:
-
Cook quinoa according to directions.

While to quinoa cooks, prep and chop veggies.
-
Combine veggies and quinoa together.
-
Dress with olive oil and lime juice and season with salt and pepper
-
Add toppings and enjoy!
