Vegan BBQ Crockpot Lentil Chili
Ingredients
Chilli:

2 tbsp olive oil
-
3/4 cup red lentils
-
1 can organic beans
-
4 cups vegetable broth
-
1 cup organic corn
-
2/3 cup onion, chopped
-
2/3 cup canned tomatoes (drained)
-
1/2 cup of diced bell peppers (plus extra for topping)
-
2 teaspoon garlic powder
-
1 tsp smoked paprika
-
Sea salt & black pepper to taste
-
3 tsp Primal Kitchen BBQ
-
Toppings :
-
Cilantro, chopped
-
2 tbsp roasted pumpkin seed
-
2 tbsp nutritional yeast
-
Sliced peppers, optional
Directions:
-
Rinse lentils thoroughly.
-
Add all ingredients to crockpot.
-
Cook on low for 5 hours. Check halfway through cooking and mix.

Taste halfway and add more seasoning if needed.
-
Serve hot and garnish with toppings
