Vegan BBQ Crockpot Lentil Chili

Ingredients

Chilli:

  • 2 tbsp olive oil

  • 3/4 cup red lentils 

  • 1 can organic beans 

  • 4 cups vegetable broth

  • 1 cup organic corn 

  • 2/3 cup onion, chopped 

  • 2/3 cup canned tomatoes (drained)

  • 1/2 cup of diced bell peppers (plus extra for topping)

  • 2 teaspoon garlic powder 

  • 1 tsp smoked paprika

  • Sea salt & black pepper to taste

  • 3 tsp Primal Kitchen BBQ

  • Toppings :

  • Cilantro, chopped

  • 2 tbsp  roasted pumpkin seed

  • 2 tbsp nutritional yeast

  • Sliced peppers, optional 

Directions:

  • Rinse lentils thoroughly. 

  • Add all ingredients to crockpot. 

  • Cook on low for 5 hours. Check halfway through cooking and mix. 

  • Taste halfway and add more seasoning if needed.

  • Serve hot  and garnish with toppings
