Simple Tofu Spinach Salad


  • 2-3 cups tender organic spinach, raw or lightly cooked

  • 1/2 cucumber, thinly sliced

  • 1/2 red pepper, sliced

  • 1/2 avocado, sliced 

  • 2-4  ounces extra-firm organic tofu

  • 2 tablespoons coconut amino acids 


  • Toss greens, cucumber, peppers, tofu, and amino acids in a large bowl.

  • Top with avocado and season with sea salt and pepper
