Simple Tofu Spinach Salad
Ingredients:

2-3 cups tender organic spinach, raw or lightly cooked

1/2 cucumber, thinly sliced

1/2 red pepper, sliced

1/2 avocado, sliced
-
2-4 ounces extra-firm organic tofu
-
2 tablespoons coconut amino acids
Directions:

Toss greens, cucumber, peppers, tofu, and amino acids in a large bowl.

Top with avocado and season with sea salt and pepper
