Exceptional Achievement

1. Base of arugula (2-3 handfuls)
2. 1/2 vine tomato, chopped
3. 1/4 a small red onion, chopped
4. Handful of blueberries
5. 1/3 a small cucumber, chopped
6. Handful of pecans
7. 1/3 a small avocado
8. Sprinkled on raw sunflower, pumpkin & hemp seeds
9. Crumbled local goat cheese
10. Fermented cabbage
11. Smoked salmon


1. Place greens in a large bowl and assemble ingredients.

2.  I did not add a dressing; I simply mixed the salad together and enjoyed!
