SHRIMP FAJITAS
Ingredients:

1lb wild shrimp
-
q tablespoons olive oil or spray avocado
-
simply organic foods fajita mix (or make your own)
-
1/2 small red onion, chopped
-
1/2 cup cherry tomatoes, chopped
-
1 bunch of cilantro, chopped
-
2 large collard greens
-
1/2 avocado
-
1 clove garlic, chopped
-
1 chop chopped mango or pineapple
-
Salt and pepper to taste
Directions:
-
Add oil to a pan on medium heat; add wild shrimp and chopped garlic
-
Mix in fajita mix ; combine well; cover and cook for 5-6 mins on medium heat
-
Chop onions, tomatoes & cilantro
-
Slice up or mash some avocado
-
Plate the collard greens wrap, add shrimp and top with veggies & avocado
-
Sprinkle on some S&P
