PESTO AVOCADO QUINOA

A Real Success

Ingredients:

  1. 2 cups quinoa, uncooked

  2. 1-2 handfuls of basil

  3. 2 avocados

  4. 1/4 cup hemp seeds

  5. 1/4 cup olive oil

  6. 1/2 lemon, juiced

  7. 1 tablespoon garlic powder

  8. 1/2 teaspoon sea salt

  9. 1/2 teaspoon black pepper

Directions:

  1. Cook the quinoa. Really want to save time? Buy @traderjoes pre-cooked organic quinoa, it takes 5-6 mins to cook on stove top!

  2. Strip basil leaves from the stems and add to a food processor along with avocados, hemp seeds, garlic, pepper salt; pulse until finely chopped. Add oil and process to form a thick paste.
    Let the quinoa cool; then juice 1/2 lemon and mix well

  3. Combine pesto and quinoa well serve hot or cold; I prefer cold!
