PESTO AVOCADO QUINOA
A Real Success
Ingredients:

2 cups quinoa, uncooked

1-2 handfuls of basil

2 avocados
-
1/4 cup hemp seeds
-
1/4 cup olive oil
-
1/2 lemon, juiced
-
1 tablespoon garlic powder
-
1/2 teaspoon sea salt

1/2 teaspoon black pepper
Directions:

Cook the quinoa. Really want to save time? Buy @traderjoes pre-cooked organic quinoa, it takes 5-6 mins to cook on stove top!

Strip basil leaves from the stems and add to a food processor along with avocados, hemp seeds, garlic, pepper salt; pulse until finely chopped. Add oil and process to form a thick paste.
Let the quinoa cool; then juice 1/2 lemon and mix well -
Combine pesto and quinoa well serve hot or cold; I prefer cold!
