Paleo Wild Tuna Salad

Serves 1

Ingredients:

  • 1 can wild tuna fish 

  • 1/2 cup chickpeas (vegans use 3/4 cup)

  • 1-2 tbsp paleo mayo ( I use Primal Kitchen)

  • 1/3 small red onion, chopped 

  • 2 stalked celery, chopped

  • ½ tsp mustard (optional)

  • 2 cups organic salad greens

  • salt, black pepper to taste


Directions:
 

  1. In a small bowl, break up the tuna with a fork. If you're vegan, mash chickpeas with a fork.

  2. Mix tuna with mustard and mayo.

  3. Add chickpeas, celery onions, and mix to combine.

  4. Season to taste with salt and black pepper and serve over greens.
