Paleo Wild Tuna Salad
Serves 1
Ingredients:

1 can wild tuna fish
-
1/2 cup chickpeas (vegans use 3/4 cup)
-
1-2 tbsp paleo mayo ( I use Primal Kitchen)

1/3 small red onion, chopped
-
2 stalked celery, chopped
-
½ tsp mustard (optional)
-
2 cups organic salad greens
-
salt, black pepper to taste
Directions:

In a small bowl, break up the tuna with a fork. If you're vegan, mash chickpeas with a fork.

Mix tuna with mustard and mayo.

Add chickpeas, celery onions, and mix to combine.
-
Season to taste with salt and black pepper and serve over greens.
