Organic Ground Turkey Casserole With Black Beans, Carrots & Green Beans
Ingredients

2 tbsp avocado oil

Organic ground turkey
-
Vegans use crumbled tempeh
-
-
One can of beans, drained and rinsed
-
1 medium onion finely chopped
-
3 large garlic cloves grated
-
4-6 carrots, sliced into quarters
-
1 cup green beans
-
1 cup cherry tomatoes
-
2 tsp basil dried
-
1/4 tsp thyme dried
-
1 tsp paprika
-
2 tbsp nutritional yeast
-
salt and pepper
-
1/2 juice of a lemon
Directions:

Preheat oven to 375F
-
In a medium pan, add chopped onion and oil, cook for 2-3 minutes, and then add ground turkey or tempeh; cook for 10 minutes on medium heat

In a casserole pan, coat the bottom with oil, add black beans, carrots, and green beans, transfer turkey or tempeh mixture, top with tomatoes and spices

Bake for 30-35 minutes

Remove from heat, squeeze lemon on top and enjoy
