Organic Ground Turkey Casserole With Black Beans, Carrots & Green Beans



  • 2 tbsp avocado oil 

  • Organic ground turkey

    • Vegans use crumbled tempeh 

  • One can of beans, drained and rinsed

  • 1 medium onion finely chopped

  • 3 large garlic cloves grated

  • 4-6 carrots, sliced into quarters

  • 1 cup green beans

  • 1 cup cherry tomatoes

  • 2 tsp basil dried

  • 1/4 tsp thyme dried

  • 1 tsp paprika

  • 2 tbsp nutritional yeast

  • salt and pepper

  • 1/2 juice of a lemon



  • Preheat oven to 375F

  • In a medium pan, add chopped onion and oil, cook for 2-3 minutes, and then add ground turkey or tempeh; cook for 10 minutes on medium heat

  • In a casserole pan, coat the bottom with oil, add black beans, carrots, and green beans, transfer turkey or tempeh mixture, top with tomatoes and spices

  • Bake for 30-35 minutes

  • Remove from heat, squeeze lemon on top and enjoy
