Eggs and Greens
Ingredients:

2 tbsp olive oil
-
3 pasture raised eggs or 4 ounces of tofu

2 tablespoons nutritional yeast, optional
-
2 cups organic baby spinach
-
2 tbsp unsweetened nut milk if making scrambled eggs - this makes them extra fluffy
-
1/3 avocado, sliced
-
Salt and pepper to taste
Directions:

In a large nonstick skillet, warm the oil over low to medium heat.

Prepare eggs or tofu to your liking.

In the same pan, lightly cook spinach.
-
Serve immediately and top with nutritional yeast and avocado.
