Eggs and Greens


  • 2 tbsp olive oil

  • 3 pasture raised eggs or 4 ounces of tofu 

  • 2 tablespoons nutritional yeast, optional 

  • 2 cups organic  baby spinach

  • 2 tbsp unsweetened  nut milk if making scrambled eggs - this makes them extra fluffy 

  • 1/3 avocado, sliced 

  • Salt and pepper to taste 


  • In a large nonstick skillet, warm the oil over low to medium heat.

  • Prepare eggs or tofu  to your liking.

  • In the same pan, lightly cook spinach.

  • Serve immediately and top with nutritional yeast and avocado.
