Creamy Broccoli Pea Cauliflower Soup
2 tbsp olive oil
1/2 yellow diced onion
2 cups broccoli florets
1/3 cup peas
2 cups cauliflower florets
2cup bone broth (I used homemade, but store-bought broth or stock works)*
1cup coconut milk
Sea salt and pepper to taste
Using a large pot, add oil and turn heat to medium.
Add onion and stir occasionally for about 5 minutes until translucent.
Add the broccoli and cauliflower, bone broth, coconut milk, and sea salt.
Let cook until the vegetables are fork tender.
Transfer to a separate blender and combine until the soup is completely mixed.
Enjoy as a meal or with a protein of your choice!
