 Coconut Cauliflower Rice with Protein & Greens

Serves 3-4


  • 2 tbsp coconut oil

  • 4 1/2 cups of cauliflower rice, fresh or frozen 

  • 2 cups broccoli, chopped 

  • 3 tbsp full fat coconut milk 

  • 2 tbsp sesame seeds

  • Salt to taste

  • Toppings:

  • Chives (optional)

  • 1/3 avocado, sliced

  • Make it meal:

  • Add 2 cups of arugula or spinach and 4-6 ounces of protein 


  • Using a bamboo steamer or a large pan, steam broccoli  for 4-6 minutes. If using large pan, blanch in water. Drain and set aside.

  • In a medium pan over medium heat, add coconut oil and milk and cauliflower.

  • Combine well and cook on medium heat until cauliflower has softened, around  5-6 minutes.

  • Combine rice with broccoli so both are evenly coated.

  • Top with chives and avocado.
