CHICKPEA SALAD

Ingredients:

  • 1 can organic chickpeas ( I like the brand Eden)

  • 1/2 red onion, finely chopped

  •  2 organic cucumbers, chopped

  •  1/4 cup basil, chopped

  • 1/4 cup extra virgin olive oil

  • 1 garlic clove (chopped) or 1 tablespoon garlic powder

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • 1 jar roasted red pepper

  • 3 tablespoons lemon juice

Directions:

  • Drain and rinse the chickpeas and pace the chickpeas in a large bowl

  • Chop the onion, cumbers, basil, garlic (if using fresh)

  • Combine chickpeas, veggies, red peppers, olive oil, spice and lemon juice; mix well
