CHARRED TAHINI BROCCOLI

Ingredients: 

  • 2 cups of organic broccoli

  • 4 tablespoons avocado or olive oil

  • 2 clove garlic chopped or 3 tbsp powder

  • 1 tablespoon paprika

  • 2 tbsp of tahini

  •  juice of half a lemon

  • 1/3 cup parsley, chopped

  • 1/3 cup sliced almonds

  • 2 tablespoons cranberries (optional)

  • 1/4 cup warm water

  • Salt & pepper

Directions:

  • Preheat oven to 400 F

  • Chop & wash broccoli

  • In a large bowl combine broccoli, oil, salt, pepper, 1 clove or 2 tbsp of garlic & paprika; roast for 30-35 mins

  • While the broccoli roasts, prepare the tahini dressing

  • In blender or food processor, add 2 tbsp of tahini, the juice of half a lemon, salt, pepper, garlic, parsley & warm water; blend until smooth 

  • Mix broccoli & sliced almonds, drizzle dressing on top

  • Top with parsley and a few dried cranberries!
