ROASTED VEGGIE BUDDHA BOWL

Ingredients:

  1. 2 medium carrots, 

  2. 1/2 zucchini

  3. 1/2 cup cauliflower, chopped

  4. 1/3 avocado, sliced

  5. 1 cup butter lettuce  

  6. 1/4 cup hemp seeds

  7. 2 tablespoon sunflower seeds

  8. 2 tablespoon nutritional yeast

  9. 4 tablespoon extra olive oil

  10. 1/2 lemon, juiced

  11. 1/2 teaspoon sea salt

  12. 1/2 teaspoon black pepper

Directions:

  1. Preheat oven to 350°F. Lightly grease a large baking sheet EVO.

  2. Wash and slice veggies

  3. Mix carrots, zucchini and cauliflower in tablespoon of EVO; place on to baking sheet

  4. Roast veggies for 30 minutes or until golden brown

  5. In a bowl, place butter lettuce, top with veggies, seeds, avocado, nutritional yeast, EVO, lemon juice, salt and pepper
