Quinoa Stuffed Peppers

 

Ingredients

  • Six medium bell peppers top cut off and cores removed.

  • 1 cup uncooked quinoa ( I used Trader Joe's Frozen to make it easy)

  • 1 tablespoon olive oil

  • 1 small onion chopped

  • 1 cup green beans, chopped

  • 1 cup cherry tomatoes, chopped

  • 2 garlic cloves minced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tbsp nutritional yeast

  • Protein

    • I added baked tofu, and my husband added organic chicken sausage 

Instructions

  • Cook quinoa according to directions

  • Preheat the oven to 375°F, and prepare the peppers and chop veggies

  • In a pan over medium heat, add oil, onions, and garlic and sautee for 3-4 minutes, then add chopped veggies and spices cooking for another 5-7 minutes

  • Carefully spoon the mixture into the sliced peppers

  • Bake uncovered until the peppers are tender for 30 minutes. You can also add some vegan or goat cheese on top!

  • Once cooked, remove from heat and add protein if enjoying!
