Serves 2-3
Ingredients:
1 cup quinoa, uncooked
1 lb. organic chicken, cubed
1 red bell pepper, quarter inch chopped (about 1 cup)
1 red onion, finely chopped
Cherry tomatoes, chopped
1 handful of cilantro, rough chopped (about 1/3 cup)
Chopped spinach
1-2 avocado (chopped into small pieces)
1/4 cup extra virgin olive oil
1 teaspoon ground cumin
2 clove garlic, finely chopped
Juice of one lime or lemon
1 teaspoon fine sea salt
1 teaspoon paprika
1 tsp chili powder
Fresh ground pepper to taste
2 cups of greens (per serving)
Top with sesame and pumpkin seeds
Directions:
Cook quinoa according to directions.
Cook chicken and prep veggies
In a large bowl combine quinoa, veggies, chicken, spices, lemon juice, oil, and avocado. Combine well.
Serve over 2 cups of greens
