Superfood NTG Quinoa Salad with Chicken

Serves 2-3

Ingredients:

  • 1 cup quinoa, uncooked

  • 1 lb. organic chicken, cubed

  • 1 red bell pepper, quarter inch chopped (about 1 cup)

  • 1 red onion, finely chopped

  • Cherry tomatoes, chopped

  • 1 handful of cilantro, rough chopped (about 1/3 cup)

  • Chopped spinach

  • 1-2 avocado (chopped into small pieces)

  • 1/4 cup extra virgin olive oil

  • 1 teaspoon ground cumin

  • 2 clove garlic, finely chopped

  • Juice of one lime or lemon

  • 1 teaspoon fine sea salt

  • 1 teaspoon paprika

  • 1 tsp chili powder

  • Fresh ground pepper to taste

  • 2 cups of greens (per serving)

  • Top with sesame and pumpkin seeds

Directions:

  1. Cook quinoa according to directions.

  2. Cook chicken and prep veggies

  3. In a large bowl combine quinoa, veggies, chicken, spices, lemon juice, oil, and avocado. Combine well.

  4. Serve over 2 cups of greens
