LUNCH INSPO: MY TOP FIVE

Here my top five favorite lunches to make for busy work weeks.

They’re in no particular order! They can all be made vegan as well! I try and aim for 10 ingredients or less!

Charred Broccoli with Tahini Dressing

  • I love to pair this with some goat cheese or wild salmon. Also, is really good with some organic ground turkey.

  • If you’re vegan, try adding in some hemp seeds, nutritional yeast and avocado!

  • This meal is gluten, soy, dairy and vegan!

Protein-Packed Lentil Salad

  • I LOVE mixing this with organic ground turkey cooked in olive oil with sauteed onions, salt, pepper, garlic & cumin; topped with chopped cilantro

  • If you’re vegan, try adding in some hemp and chia seeds

  • This meal is gluten, soy, dairy and vegan!

Cozy Kale, Chicken, White Bean Stew

Superfood Salad

  • I love a GOOD salad that is nutrient dense

  • This salad pairs nicely with my turmeric immunity soup, a wild fish or two soft boiled eggs and avocado. I also like adding some Ithaca Hummus & one Dr. Krackers with some Kite hill “cheese”

  • This meal is gluten, soy, dairy and vegan!
