1. 1lb Wild shrimp

  2. 2-3 tablespoons olive oil

  3. simply organic foods fajita mix (or make your own)

  4. 1/2 small red onion, chopped

  5. 1/2 cup cherry tomatoes, chopped

  6. 1 bunch of cilantro, chopped

  7. 2 large collard greens

  8. 1/2 avocado

  9. 1 clove garlic, chopped

  10. Salt and pepper to taste


  1. Add oil to a pan on medium heat; add wild shrimp and chopped garlic

  2. Mix in fajita mix ; combine well; cover and cook for 5-6 mins on medium heat

  3. Chop onions, tomatoes & cilantro

  4. Slice up or mash some avocado 

  5. Plate the collard greens wrap, add shrimp and top with veggies & avocado Sprinkle on some S&P
