VEGAN PORTOBELLO FAJITAS

Serves: 2

Ingredients

  • 3 large portobello mushrooms, sliced

  • 1-2 bell peppers

  • 1/3 onion, chopped

  • 2 tbsp olive oil

  • 1 tomato, chopped

  • @sietefoods tortillas ( I used two)

  • 1 tbsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 1/2 tsp cumin

  • 1 cup of greens

  • Avocado for toppings


Directions:

  • In a large skillet over medium heat, add oil and onions; sauté for 3 mins

  • Add mushrooms; cook for 2 minutes

  • Add in peppers and spices

  • Stirring occasionally, cook another 7-8 minutes or until softened

  • Warm the tortillas and spoon the fajita mixture into the center of tortillas over a bed of greens

  • Top w/ guacamole
