CAULIFLOWER TABOULI
Serves 2
Ingredients:

1 head of cauliflower or 4 cups frozen cauliflower rice

4 tomatoes, very finely chopped
-
1 organic cucumber, finely chopped
-
1 cup parsley, finely chopped
-
1 cup mint leaves, finely chopped
-
2 chopped scallions, finely chopped
-
3-4 tbsp lemon juice
-
3-4 tbsp extra virgin olive oil
-
1 tbsp garlic, finely chopped

Sale & pepper to taste
Directions:

Prepare rice. If using frozen, cook on stove over low heat with olive oil for 10 minutes or until tender.

Transfer rice mixture to a large mixing bowl, add all of the other ingredients, and toss until well combined.

Tweak olive oil, lemon juice, mint, salt, and pepper to taste.

Pair with a protein such as organic chicken or organic veggie burger.
