CAULIFLOWER TABOULI

Lunch, dinner or a side

Ingredients

1 head of cauliflower, grated
4 Roma tomatoes, very finely chopped
1 organic cucumber, finely chopped
1 cup parsley, finely chopped
1 cup mint leaves, finely chopped
2 chopped scallions, finely chopped
3-4 tbsp lemon juice
3-4 tbsp extra virgin olive oil
1 tbsp garlic, finely chopped
Sale & pepper to taste

Directions:

  1. To make the cauliflower rice, place the raw florets into a food processor (nutribullet will work) and pulse until the consistency of couscous. No food processor? Grate or finely chop!

  2. Transfer this mixture to a large mixing bowl, add all of the other ingredients, and toss until well combined. Tweak olive oil, lemon juice, mint, salt, and pepper to taste
