Serves 2


  • 1 head of cauliflower or 4 cups frozen cauliflower rice 

  • 4 tomatoes, very finely chopped

  • 1 organic cucumber, finely chopped

  • 1 cup parsley, finely chopped

  • 1 cup mint leaves, finely chopped

  • 2 chopped scallions, finely chopped

  • 3-4 tbsp lemon juice

  • 3-4 tbsp extra virgin olive oil

  • 1 tbsp garlic, finely chopped

  • Sale & pepper to taste


  1. Prepare rice. If using frozen, cook on stove over low heat with olive oil for 10 minutes or until tender.

  2. Transfer rice mixture to a large mixing bowl, add all of the other ingredients, and toss until well combined.

  3. Tweak olive oil, lemon juice, mint, salt, and pepper to taste.

  4. Pair with a protein such as organic chicken or organic veggie burger.
